2019 is here, yet Filipinos still keep centuries old traditions. Among many ways that Filipinos celebrate New Year’s is to serve a variety of dishes. Food is not simply laid on the table for eating; each food is accompanied with a certain belief that is related to the fortune of the coming year for the family. Among those beliefs include:
- The serving of 12 round fruits, which suggests good luck.
- Do not serve chicken – this suggests bad luck of “isang kahig, isang tuka” – one scratch, one peck. This saying is associated with famine, or shortage of food sources for the year.
- Wear Red clothing – red is indicative of good luck.
- Wear polka-dots – somehow this entails good luck also.
As you may notice, a lot of these are very much acquainted with Chinese superstition, and it is strongly kept by many even to this day.
One of the most noteworthy tradition is the serving of a Filipino classic dish called “pansit,” which is long noodles. It is long believed in the Philippine tradition that a serving of pansit on New Year’s is associated with a longer life and healthier living in the year to come. This popular dish is served in many festivities in the Philippines.
Preparing this dish is very easy and most people cooking it for the first time get it in a few tries.
- 4-5 cups of chicken stock
- ¼ cup of soy sauce
- 8 ounces of rice noodles
- Chicken meat (pulled into strips)
- 16 ounces of pork, chopped into cubes
- 1 onion, peeled and thinly sliced
- 2 cloves of garlic, minced
- 1 small cabbage, chopped
- 1 small carrot thinly sliced
- 1 celery chopped
- Lemon, or Calamansi
Steps include primary preparations:
- Preparing a flavorful chicken stock.
- Heat a pot with a mixture of chicken stock and soy sauce until it boils
- Submerging noodles (rice noodles) into the stock.
- After boiling for 1 to 2 minutes, set aside and reserve at least half of the remaining stock.
- Prepare the other part of the dish by cooking in a wok or a pan a table spoon of oil.
- Cook the chicken until lightly browned. Set the cooked chicken to the side.
- Add onions and garlic until softened, and then include the pork until browned to liking.
- Add the carrots and the celery for about a minute.
- Add the chopped cabbage, and cook for another minute.
- After cooking the vegetables, put in the chicken.
- Put the noodles into the mixture, and add the reserved stock.
- Gently toss and mix everything.
- Adjust the flavor with salt and pepper.
- Finally, serve!
